Not Just Jerky

High in the Andes mountains of Peru, the Quechua, an ancient South American tribe, discovered the secret to surviving long, bitter winters. During the abundant summer months, they left slabs of salted meat to dry under the sun and then froze them overnight when the temperatures dropped.

The result?

A preserved, chewy meat product they called ch’arki, dried meat.
